Time To Get Serious





Last night, I saw on the local news that the new Brewery and restaurant is expected to open in 30 days. Today I saw on Monster.com the advertisement for the general manager only, so far. Now is the time to get that sit down interview as soon as chef Sheckles is ready.

I have my resume ready, letters of recommendation, and some pictures of some party trays I whipped up for a lady's 100th birthday party, pictured above(click to enlarge)and a photo of me me dishing up some Guinness Stew for St. Patrick's Day. I wish I had all the pictures of the parties we had there. The activity director had the complete portfolio as it was actually her job to arrange the parties with family members and my job to make it happen. Can't blame her, all I had to do was request a copy, grrr too late now.

I'm more interested in a kitchen manager job or Sous Chef, I don't want a job buried in paperwork like I had at the previous job. They haven't started to advertise those positions yet, however, now is the time to corner him and get my interview under way. John Sheckles is the corporate chef and goes by the name of "Sheckles," we've worked together before so I am quite optimistic about this position. I already know a lot of people in the corporation and both brothers that own SouthernBoysConcepts.com.

I'm going to need to start working out with some light weight training and exercise or my first day of real work will kill me! Lazy time will soon be over. It's been a nice ride though, time to focus on the job now, get my strength back and work at losing a few pounds too.

Hope things works out for you. You have too much to offer to just be sitting around-not that ther is anything wrong with that! And possibly the only thing that may make me move back to the Shore would be a cool gig, with a cool local employer, at a job where I feel somebody appreciates the product I help to provide. At least the rent down there is cheaper..

Once they get going and start bringing in money instead of putting out about $3 million so far, they have so much room to expand it's not funny Bill.

First they have to get up and running before they think about spending more money but that place will be employing a lot people in the future.

They will do Brewery tours with samplings and such just like DogFishHead beers.

The big room next to the dining room is every bit 4000ft! I think that would make a nice huge dining room and could be partitioned off, have 2 parties of 50+ ppl separated and still have room for another 100 customers too.

Just not enough money to do that yet. It's a huge job and these guys are young and successful at everything they do. John Knoor, Tom's brother is also the corporate senior vice president for the Phillip's corporation at Harbour Place in Baltimore Bill.

They have everything they need to be successful. More hands on deck for the now, but I really don't know the details.

Right now The Red Roost is closed until March for all you can eat crabs. So for a while in the begining they will be shifting some people already employed within their 5 resturants now to fill some spots until things get rolling and the Red Roost opens back up.
